Ingredients

- 2 medium zucchinis, sliced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Dip zucchini slices in beaten eggs, then coat with the breadcrumb mixture.
- Place the coated zucchini in the air fryer basket in a single layer.
- Air fry for 10-12 minutes, flipping halfway through.
- Remove from air fryer and serve hot.
Notes
- Adjust seasoning as per taste.
- For extra crispiness, spray zucchini with cooking oil before air frying.
- Serve with marinara sauce for dipping.
