Delicious short ribs braised in apple cider for a rich flavor.
Ingredients

- 4 lbs short ribs
- 2 cups apple cider
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 sprigs thyme
- 2 bay leaves
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season the short ribs with salt and pepper.
- In a large pot, sear the short ribs until browned on all sides.
- Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
- Pour in the apple cider and add thyme and bay leaves.
- Bring to a simmer and cover the pot.
- Transfer the pot to the oven and braise for 3 hours.
- Remove the pot from the oven and let it rest for 10 minutes before serving.
Notes
- Serve with mashed potatoes or crusty bread.
- Store leftovers in the refrigerator for up to 3 days.
