Ingredients

  • 4 lbs short ribs
  • 2 cups apple cider
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 sprigs thyme
  • 2 bay leaves
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. In a large pot, sear the short ribs until browned on all sides.
  4. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
  5. Pour in the apple cider and add thyme and bay leaves.
  6. Bring to a simmer and cover the pot.
  7. Transfer the pot to the oven and braise for 3 hours.
  8. Remove the pot from the oven and let it rest for 10 minutes before serving.

  • Serve with mashed potatoes or crusty bread.
  • Store leftovers in the refrigerator for up to 3 days.
