Ingredients

- 4 cups green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 cup carrots, shredded
- 1/2 cup green onions, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup peanuts, chopped
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon grated ginger
Instructions
- In a large bowl, combine green cabbage, red cabbage, carrots, green onions, cilantro, and peanuts.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, and ginger.
- Pour the dressing over the cabbage mixture.
- Toss well to coat all ingredients.
- Let the slaw sit for at least 15 minutes before serving.
Notes
- Adjust sweetness by adding more or less honey.
- For extra crunch, add more peanuts.
- This slaw can be made a day ahead for better flavor.
