Ingredients

  • 1 cup red cabbage, shredded
  • 1 cup carrots, shredded
  • 1/2 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, chopped
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger

Instructions

  1. In a large bowl, combine green cabbage, red cabbage, carrots, green onions, cilantro, and peanuts.
  2. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, and ginger.
  3. Pour the dressing over the cabbage mixture.
  4. Toss well to coat all ingredients.
  5. Let the slaw sit for at least 15 minutes before serving.

Notes

  • Adjust sweetness by adding more or less honey.
