Ingredients

- 200g rice noodles
- 1 cup shredded carrots
- 1 red bell pepper, sliced
- 1 cucumber, julienned
- 1 cup bean sprouts
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon fresh ginger, grated
- 2 tablespoons lime juice
- 1 tablespoon honey
Instructions
- Cook the rice noodles according to package instructions.
- Drain and rinse the noodles under cold water.
- In a large bowl, combine the carrots, bell pepper, cucumber, bean sprouts, cilantro, and green onions.
- Add the cooled noodles to the vegetable mixture.
- In a small bowl, whisk together sesame oil, soy sauce, ginger, lime juice, and honey.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
