Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 cup beef broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 potatoes, peeled and cubed

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion, bell pepper, and garlic to the pot. Sauté until softened.
  5. Stir in tomatoes, beef broth, cumin, oregano, bay leaf, salt, and pepper.
  6. Add the browned beef back into the pot.
  7. Cover and simmer for 1.5 hours.
  8. Add potatoes and cook for another 30 minutes until tender.
