Description

A nourishing quinoa bowl with seasonal vegetables and a sweet maple tahini dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup roasted sweet potatoes, cubed
  • 1 cup kale, chopped
  • 1/2 cup cranberries
  • 1/4 cup pumpkin seeds
  • 1/4 cup tahini
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse quinoa under cold water.
  3. Combine quinoa and water in a pot, bring to a boil, then reduce heat to simmer for 15 minutes.
  4. Roast sweet potatoes for 25 minutes until tender.
  5. In a bowl, mix tahini, maple syrup, lemon juice, salt, and pepper.
  6. Once quinoa is cooked, fluff with a fork.
  7. In a serving bowl, combine quinoa, sweet potatoes, kale, cranberries, and pumpkin seeds.
  8. Drizzle with maple tahini dressing and serve.
