Description
A nourishing quinoa bowl with seasonal vegetables and a sweet maple tahini dressing.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup roasted sweet potatoes, cubed
- 1 cup kale, chopped
- 1/2 cup cranberries
- 1/4 cup pumpkin seeds
- 1/4 cup tahini
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse quinoa under cold water.
- Combine quinoa and water in a pot, bring to a boil, then reduce heat to simmer for 15 minutes.
- Roast sweet potatoes for 25 minutes until tender.
- In a bowl, mix tahini, maple syrup, lemon juice, salt, and pepper.
- Once quinoa is cooked, fluff with a fork.
- In a serving bowl, combine quinoa, sweet potatoes, kale, cranberries, and pumpkin seeds.
- Drizzle with maple tahini dressing and serve.
