Description
A hearty pasta dish featuring sausage and autumn vegetables.
Ingredients

- 8 oz penne pasta
- 1 lb Italian sausage
- 1 cup butternut squash, diced
- 1 cup kale, chopped
- 2 cloves garlic, minced
- 1/2 cup onion, diced
- 1/2 cup chicken broth
- 1/4 cup Parmesan cheese, grated
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook penne pasta according to package instructions.
- In a large skillet, heat olive oil over medium heat.
- Add sausage and cook until browned.
- Add onion and garlic, sauté until softened.
- Add butternut squash and chicken broth, cook until squash is tender.
- Stir in kale and cook until wilted.
- Combine pasta with the sausage mixture.
- Serve topped with Parmesan cheese.
Notes
- Feel free to substitute turkey sausage for a leaner option.
- You can add other autumn vegetables such as Brussels sprouts or carrots.
- This dish can be made ahead and reheated.
