- 8 ounces pasta
- 1 pound Italian sausage
- 2 cups butternut squash, diced
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon sage
- Salt to taste
- Pepper to taste
- Parmesan cheese for serving
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- Cook pasta according to package instructions. Drain and set aside.
- In a skillet, cook sausage over medium heat until browned. Add onion and garlic, cook until softened.
- Add roasted squash and sage to the skillet, stir to combine.
- Add cooked pasta to the skillet, toss everything together.
- Serve with grated Parmesan cheese on top.
