- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup chopped spinach
- 1/4 cup diced bell pepper
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix cottage cheese, eggs, spinach, bell pepper, salt, and pepper.
- Pour the mixture into a greased baking dish.
- If using, sprinkle shredded cheese on top.
- Bake for 25-30 minutes or until the eggs are set.
- Let it cool slightly before serving.

- You can add other vegetables as per your preference.
