- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 egg
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups diced potatoes
- 2 tbsp olive oil
- 1/2 cup feta cheese, crumbled
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine ground beef, breadcrumbs, Parmesan, garlic, egg, oregano, salt, and pepper.
- Form the mixture into meatballs.
- In a separate bowl, toss diced potatoes with olive oil, salt, and pepper.
- Place meatballs and potatoes on a baking sheet.
- Bake for 25-30 minutes or until meatballs are cooked through and potatoes are tender.
- Sprinkle feta cheese over the dish and return to the oven for 5 minutes.
- Garnish with fresh parsley before serving.
