Description
Delicious quesadillas filled with spinach and mushrooms, baked to perfection.
Ingredients

- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup shredded cheese
- 4 large tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Add mushrooms and sauté for 5 minutes.
- Add spinach and cook until wilted.
- Season with garlic powder, onion powder, salt, and pepper.
- Place a tortilla on a baking sheet.
- Spread the spinach and mushroom mixture on half of the tortilla.
- Sprinkle cheese on top of the mixture.
- Fold the tortilla over and press down gently.
- Bake for 15-20 minutes until golden brown.
Notes
- Serve with salsa or sour cream.
- Use any cheese of your choice.
- Can be made ahead and reheated.
