Description
Baked Vegetable Rolls are a healthy and delicious snack or appetizer filled with various vegetables.
Ingredients

- 1 cup mixed vegetables (carrots, bell peppers, spinach)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 6 sheets of spring roll wrappers
- 1 egg, beaten (for sealing)
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a pan and sauté garlic until fragrant.
- Add mixed vegetables, salt, pepper, and oregano. Cook until tender.
- Remove from heat and let cool.
- Place a spring roll wrapper on a clean surface with a corner facing you.
- Place a spoonful of the vegetable mixture on the wrapper. Fold the corners over the filling and roll tightly.
- Seal the edge with beaten egg.
- Repeat with remaining wrappers and filling.
- Place rolls on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until golden brown.
Notes
- Serve with a dipping sauce of your choice.
- Feel free to use any vegetables you have on hand.
