Description

Baked Vegetable Rolls are a healthy and delicious snack or appetizer filled with various vegetables.


Ingredients

Scale
  • 1 cup mixed vegetables (carrots, bell peppers, spinach)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 6 sheets of spring roll wrappers
  • 1 egg, beaten (for sealing)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a pan and sauté garlic until fragrant.
  3. Add mixed vegetables, salt, pepper, and oregano. Cook until tender.
  4. Remove from heat and let cool.
  5. Place a spring roll wrapper on a clean surface with a corner facing you.
  6. Place a spoonful of the vegetable mixture on the wrapper. Fold the corners over the filling and roll tightly.
  7. Seal the edge with beaten egg.
  8. Repeat with remaining wrappers and filling.
  9. Place rolls on a baking sheet lined with parchment paper.
  10. Bake for 20-25 minutes until golden brown.
