Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the carrots, parsnips, and sweet potatoes.
- Add balsamic vinegar, olive oil, salt, black pepper, and rosemary. Toss to coat.
- Spread the vegetables on a baking sheet in a single layer.
- Roast for 25-30 minutes or until tender and caramelized, stirring halfway through.
- Remove from oven and serve warm.
