A refreshing and spicy chicken salad with a creamy peanut sauce.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup shredded carrots
- 1 cup chopped cucumber
- 1 cup red cabbage, shredded
- 1/2 cup green onions, sliced
- 1/2 cup cilantro, chopped
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
Instructions
- In a large bowl, combine the chicken, carrots, cucumber, red cabbage, green onions, and cilantro.
- In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, and garlic until smooth.
- Pour the peanut sauce over the salad and toss to coat evenly.
- Serve chilled or at room temperature.
Notes
- Adjust the spice level by adding chili sauce if desired.
- This salad can be made a day ahead.
