Ingredients

  • 1 lb salmon fillet, cut into bite-sized pieces
  • 1 cup cooked rice
  • 2 cups mixed vegetables (broccoli, carrots, bell peppers)
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and soy sauce.
  3. Coat salmon pieces in the sauce mixture.
  4. Place salmon on a baking sheet lined with parchment paper.
  5. Bake for 12-15 minutes or until cooked through.
  6. While salmon cooks, steam mixed vegetables until tender.
  7. To serve, place rice in bowls, top with salmon and mixed vegetables.
  8. Garnish with green onions and sesame seeds.
