Ingredients

  • 500g beef, diced
  • 200g Stilton cheese, crumbled
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 500ml beef stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1 sheet puff pastry
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 180°C.
  2. In a pot, brown the beef over medium heat.
  3. Add onion, carrots, and garlic; cook until soft.
  4. Pour in the beef stock and Worcestershire sauce.
  5. Stir in thyme and simmer for 1 hour.
  6. Remove from heat and mix in Stilton cheese.
  7. Transfer filling to a pie dish.
  8. Cover with puff pastry and seal the edges.
  9. Brush with beaten egg.
  10. Bake for 30-35 minutes until golden brown.

Notes

  • Let the pie cool slightly before serving.
  • Serve with mashed potatoes or a green salad.
