Ingredients

- 4 medium beets, roasted
- 2 cups arugula
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap beets in foil and roast for 45-60 minutes.
- Once cool, peel and dice beets.
- In a large bowl, combine arugula, beets, feta, and walnuts.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle dressing over salad and toss gently.
- Serve immediately.
