Description

Delicious mini cheesecakes with a berry swirl.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract
  • 1 cup heavy cream
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp lemon juice
  • 1/4 cup graham cracker crumbs

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, beat cream cheese and sugar until smooth.
  3. Add vanilla extract and mix well.
  4. In another bowl, whip heavy cream until soft peaks form.
  5. Gently fold whipped cream into the cream cheese mixture.
  6. Blend mixed berries with lemon juice until smooth.
  7. Prepare a muffin tin with liners and add a spoonful of graham cracker crumbs to each.
  8. Pour the cream cheese mixture over the crumbs.
  9. Top with berry puree and swirl with a toothpick.
  10. Bake for 20 minutes, then cool in the fridge for at least 2 hours.

Notes

  • Use fresh or frozen berries.
  • Chill thoroughly for best texture.
  • Can be made a day in advance.
