Description
Delicious mini cheesecakes with a berry swirl.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 1 cup heavy cream
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tbsp lemon juice
- 1/4 cup graham cracker crumbs
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and mix well.
- In another bowl, whip heavy cream until soft peaks form.
- Gently fold whipped cream into the cream cheese mixture.
- Blend mixed berries with lemon juice until smooth.
- Prepare a muffin tin with liners and add a spoonful of graham cracker crumbs to each.
- Pour the cream cheese mixture over the crumbs.
- Top with berry puree and swirl with a toothpick.
- Bake for 20 minutes, then cool in the fridge for at least 2 hours.
Notes
- Use fresh or frozen berries.
- Chill thoroughly for best texture.
- Can be made a day in advance.
