Ingredients

  • 1 egg
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tbsp lemon juice
  • Graham cracker crumbs for crust

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix cream cheese, sugar, and vanilla until smooth.
  3. Add the egg and mix until combined.
  4. In another bowl, mash the mixed berries with lemon juice.
  5. Prepare a muffin tin with liners and add a layer of graham cracker crumbs.
  6. Pour the cheesecake mixture over the crumbs.
  7. Drop spoonfuls of berry mixture on top and swirl with a toothpick.
  8. Bake for 15-20 minutes until set.
  9. Let cool and refrigerate before serving.
