Delicious berry swirl cheesecake bites that are easy to make and perfect for any occasion.
Ingredients

- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- 1 egg
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 tbsp lemon juice
- Graham cracker crumbs for crust
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix cream cheese, sugar, and vanilla until smooth.
- Add the egg and mix until combined.
- In another bowl, mash the mixed berries with lemon juice.
- Prepare a muffin tin with liners and add a layer of graham cracker crumbs.
- Pour the cheesecake mixture over the crumbs.
- Drop spoonfuls of berry mixture on top and swirl with a toothpick.
- Bake for 15-20 minutes until set.
- Let cool and refrigerate before serving.
Notes
- Use fresh or frozen berries.
- Adjust sweetness according to taste.
- Store leftovers in the fridge for up to 3 days.
