A delicious recipe for cheesy beef birria tacos made in a slow cooker.
Ingredients

- 2 pounds beef chuck roast
- 1 cup beef broth
- 3 dried guajillo chilies
- 2 dried ancho chilies
- 4 cloves garlic
- 1 onion, chopped
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1 cup shredded cheese
- 12 corn tortillas
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Toast the dried chilies in a pan until fragrant.
- Soak the chilies in hot water for 15 minutes, then blend with garlic, onion, cumin, oregano, black pepper, and salt.
- Place the beef roast in the slow cooker and pour the chili mixture over it.
- Add the beef broth and mix well.
- Cook on low for 8 hours or until the beef is tender.
- Shred the beef and mix it back into the sauce.
- Warm the tortillas and fill them with the cheesy beef.
- Garnish with cilantro and serve with lime wedges.

- Adjust spice levels by adding more or fewer chilies.
- Use any cheese of your choice for filling.
