  • 1 cup beef broth
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 4 cloves garlic
  • 1 onion, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 cup shredded cheese
  • 12 corn tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Toast the dried chilies in a pan until fragrant.
  2. Soak the chilies in hot water for 15 minutes, then blend with garlic, onion, cumin, oregano, black pepper, and salt.
  3. Place the beef roast in the slow cooker and pour the chili mixture over it.
  4. Add the beef broth and mix well.
