Ingredients

  • 1 cup black beans, dried
  • 2 cups water
  • 1 cup rice
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the black beans and soak them overnight.
  2. Drain and add the beans to a pot with water. Cook for 1 hour or until tender.
  3. In a separate pot, heat olive oil over medium heat.
  4. Add onion and garlic. Sauté until soft.
  5. Add rice and cumin. Stir for 2 minutes.
  6. Add 2 cups of water and bring to a boil.
  7. Reduce heat, cover, and simmer for 20 minutes.
  8. Combine cooked beans with rice. Mix well.
  9. Season with salt and garnish with cilantro before serving.
