- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 2 eggs
- 1/4 cup lime juice
- 1 teaspoon vanilla extract
- 1 cup blackberries, blended
- Blackberry sauce for topping
Instructions
- Preheat the oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of cupcake liners.
- In a bowl, beat cream cheese and sugar until smooth.
- Add eggs, lime juice, and vanilla; mix until combined.
- Fold in blended blackberries.
- Pour the cheesecake mixture over the crust.
- Bake for 20-25 minutes until set.
- Cool completely and refrigerate for at least 2 hours.
- Top with blackberry sauce before serving.

- Use fresh blackberries for best flavor.
- Can substitute lime with lemon.
