Description

A delicious blueberry and custard-filled brioche bun topped with a crumble.


Ingredients

Scale
  • 500g brioche dough
  • 200g blueberries
  • 250ml custard
  • 100g butter
  • 100g flour
  • 50g sugar
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the brioche dough and cut into circles.
  3. Place a spoonful of custard and a few blueberries in the center of each circle.
  4. Fold the dough over the filling to create a bun.
  5. Place the buns on a baking sheet lined with parchment paper.
  6. For the crumble, mix butter, flour, and sugar until crumbly.
  7. Sprinkle the crumble over the buns.
  8. Brush the tops with the egg wash.
  9. Bake for 20-25 minutes until golden brown.
  10. Let cool before serving.

Notes

  • Use fresh or frozen blueberries.
  • Make sure the custard is cool before adding to the buns.
  • Store leftover buns in an airtight container.
