- 1 cup almond flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup blueberry jam
- 1 cup powdered sugar for rolling
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine almond flour, butter, powdered sugar, vanilla, and salt.
- Mix until a dough forms.
- Take a small amount of dough, flatten it, and place a teaspoon of blueberry jam in the center.
- Wrap the dough around the jam, forming a ball.
- Place the balls on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until lightly golden.
- Cool slightly, then roll in powdered sugar.
Notes
- Store cookies in an airtight container.
- For a stronger almond flavor, add almond extract.
