Ingredients

- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, baking soda, salt, and poppy seeds.
- In another bowl, whisk milk, oil, egg, vanilla extract, and lemon zest.
- Combine wet and dry ingredients, then fold in blueberries.
- Pour batter into muffin tins lined with paper liners.
- Bake for 20-25 minutes until golden and a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to three days.
- For extra flavor, add more lemon zest.
- Use frozen blueberries if fresh ones are not available.
