Ingredients

- 2 cups rolled oats
- 1 cup almond milk
- 1/2 cup mashed bananas
- 1 cup blueberries
- 1/4 cup maple syrup
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix rolled oats, baking powder, cinnamon, and salt.
- In another bowl, combine almond milk, mashed bananas, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix well.
- Fold in the blueberries gently.
- Transfer the mixture to a greased baking dish.
- Bake for 25-30 minutes or until golden brown.
- Let it cool for a few minutes before serving.
Notes
- Store leftovers in the fridge for up to 3 days.
- Can be reheated in the microwave.
- Add nuts for extra crunch if desired.
