Ingredients

- 1 cup orzo pasta
- 1 cup Boursin cheese
- 2 cups vegetable broth
- 1 cup spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Parmesan cheese, grated
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a pot, cook orzo pasta in vegetable broth until al dente.
- Drain excess liquid and return orzo to the pot.
- Add Boursin cheese, spinach, cherry tomatoes, olive oil, garlic powder, salt, and pepper. Stir until combined.
- Transfer mixture to a baking dish and sprinkle with Parmesan cheese.
- Bake for 20 minutes or until bubbly and golden.
- Let cool for a few minutes before serving.

- Feel free to add other vegetables.
- This dish can be made ahead of time and reheated.
