Ingredients

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Stir in minced garlic and grated ginger; cook for 1 minute.
  4. Add chicken thighs, paprika, salt, and pepper; brown the chicken on all sides.
  5. Pour in coconut milk and bring to a simmer.
  6. Cover and cook for 25-30 minutes until chicken is cooked through.
  7. Garnish with fresh cilantro before serving.
