Ingredients

- 4 large eggs
- 1/2 cup shredded cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup cooked sausage or bacon
- 4 large tortillas
- Salt to taste
- Pepper to taste
Instructions
- In a bowl, whisk the eggs with salt and pepper.
- Heat a skillet over medium heat and add the bell peppers and onions.
- Cook until softened, about 3-4 minutes.
- Add the eggs and cook until scrambled.
- Stir in the cooked sausage or bacon and cheese until melted.
- Warm the tortillas in another skillet.
- Fill each tortilla with the egg mixture and roll into a burrito.
- Serve warm.
Notes
- You can add other vegetables like spinach or tomatoes.
- Make it spicy by adding jalapeños.
- Serve with salsa on the side.
