- 4 large flour tortillas

Instructions
- In a bowl, whisk the eggs with salt and pepper.
- Heat oil or butter in a pan over medium heat.
- Sauté onions and bell peppers until soft.
- Add cooked sausage or bacon to the pan.
- Pour in the eggs and scramble until cooked.
- Warm tortillas in another pan.
- Place egg mixture on each tortilla and sprinkle with cheese.
- Roll up the tortillas to enclose the filling.
