Description
A creamy and cheesy broccoli cheddar soup that warms you up.
Ingredients

- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add broccoli and vegetable broth, bring to a boil.
- Reduce heat and simmer until broccoli is tender.
- Blend the soup until smooth, return to pot.
- Stir in heavy cream, cheese, salt, pepper, and nutmeg.
- Cook on low until cheese melts.
- Serve hot.

- Use fresh broccoli for best flavor.
- Adjust cheese amount to taste.
- Store leftovers in the fridge for up to 3 days.
