Description
A creamy and cheesy soup made with fresh broccoli and cheese.
Ingredients

- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup vegetable broth
- 1 cup milk
- 1/2 cup onion, chopped
- 2 tablespoons butter
- 2 tablespoons flour
- Salt and pepper to taste
Instructions
- Melt butter in a pot over medium heat.
- Add onion and sauté until soft.
- Stir in flour and cook for 1 minute.
- Slowly add vegetable broth while stirring.
- Bring to a simmer and add broccoli.
- Cook until broccoli is tender.
- Pour in milk and cheese, stirring until melted.
- Season with salt and pepper.
- Serve hot.
Notes
- For a thicker soup, add more flour.
- Use fresh broccoli for best flavor.
- Can add more cheese for extra creaminess.
