Ingredients

  • Salt and pepper to taste

  • 1 pre-made pie crust
  • 1 egg, beaten for egg wash

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes.
  4. Roll out the pie crust on a baking sheet.
  5. Spread the roasted squash and crumbled goat cheese over the crust, leaving a border.
  6. Fold the edges of the crust over the filling.
  7. Brush the crust with beaten egg.
  8. Bake for 25-30 minutes or until the crust is golden brown.
  9. Allow to cool slightly before slicing and serving.
