- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the butternut squash with olive oil, salt, and pepper.
- Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
- In a large skillet, sauté onion and garlic over medium heat until soft.
- Add roasted squash, broth, and nutmeg to the skillet.
- Simmer for 5 minutes, then blend until smooth.
- Stir in heavy cream and Parmesan cheese.
- Serve over your favorite pasta.

- This sauce can be made ahead and stored in the refrigerator.
- It pairs well with whole wheat or gluten-free pasta.
