  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 premade pie crust
  • 3 eggs
  • 1 cup heavy cream
  • 1/2 cup grated cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, heat olive oil over medium heat. Add onions and cook until caramelized, about 20 minutes.
  3. Meanwhile, steam or boil the butternut squash until tender, about 10 minutes.
  4. In a large bowl, combine butternut squash, caramelized onions, eggs, cream, salt, pepper, and thyme. Mix well.
  5. Pour the mixture into the pie crust. Sprinkle cheese on top if desired.
  6. Bake for 35-40 minutes or until the filling is set.
  7. Let it cool for a few minutes before slicing and serving.
