Ingredients

- 1 medium butternut squash, peeled and cubed
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 premade pie crust
- 3 eggs
- 1 cup heavy cream
- 1/2 cup grated cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat. Add onions and cook until caramelized, about 20 minutes.
- Meanwhile, steam or boil the butternut squash until tender, about 10 minutes.
- In a large bowl, combine butternut squash, caramelized onions, eggs, cream, salt, pepper, and thyme. Mix well.
- Pour the mixture into the pie crust. Sprinkle cheese on top if desired.
- Bake for 35-40 minutes or until the filling is set.
- Let it cool for a few minutes before slicing and serving.
Notes
- Let the pie cool completely for easier slicing.
- Serve warm or at room temperature.
- Can be made a day ahead and reheated.
