A delicious and healthy lasagna made with butternut squash and spinach.
Ingredients

- 12 lasagna noodles
- 2 cups butternut squash, peeled and diced
- 2 cups fresh spinach
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 1 egg
- 2 cups marinara sauce
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a bowl, mix ricotta cheese, egg, salt, and pepper.
- In a baking dish, spread a layer of marinara sauce.
- Layer lasagna noodles, butternut squash, spinach, ricotta mixture, and mozzarella cheese.
- Repeat layers, finishing with marinara sauce and Parmesan cheese on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly.
- Let cool for 10 minutes before serving.
Notes
- Can substitute butternut squash with zucchini.
- Use gluten-free noodles for a gluten-free option.
- Adjust the amount of cheese to your preference.
