Ingredients

  • 2 cups butternut squash, peeled and diced
  • 2 cups fresh spinach
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 egg
  • 2 cups marinara sauce
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. In a bowl, mix ricotta cheese, egg, salt, and pepper.
  4. In a baking dish, spread a layer of marinara sauce.
  5. Layer lasagna noodles, butternut squash, spinach, ricotta mixture, and mozzarella cheese.
  6. Repeat layers, finishing with marinara sauce and Parmesan cheese on top.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  9. Let cool for 10 minutes before serving.
