- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup butterscotch chips
Instructions
- Preheat your oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a 9×13 inch baking pan.
- In a separate bowl, beat cream cheese, brown sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in butterscotch chips.
- Pour the cream cheese mixture over the crust.
- Bake for 30-35 minutes until set.
- Let cool, then refrigerate for at least 4 hours before cutting.
Notes
- For a stronger butterscotch flavor, add more butterscotch chips.
- Serve chilled for the best texture.
- Store leftovers in the refrigerator.
