Description

A spicy and creamy chicken chili with Cajun flavors.


Ingredients

  • 1 lb chicken breast, diced
  • 1 can white beans, drained
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add diced chicken, cook until browned.
  4. Stir in Cajun seasoning, salt, and pepper.
  5. Add chicken broth, beans, and corn. Bring to a boil.
  6. Reduce heat and simmer for 15 minutes.
  7. Stir in heavy cream and heat through.
  8. Serve hot.

Notes

  • Adjust spice level by adding more or less Cajun seasoning.
  • Top with chopped green onions or cilantro if desired.
  • This chili can be made ahead and reheated.
