Description
A spicy and creamy chicken chili with Cajun flavors.
Ingredients

- 1 lb chicken breast, diced
- 1 can white beans, drained
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add diced chicken, cook until browned.
- Stir in Cajun seasoning, salt, and pepper.
- Add chicken broth, beans, and corn. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in heavy cream and heat through.
- Serve hot.
Notes
- Adjust spice level by adding more or less Cajun seasoning.
- Top with chopped green onions or cilantro if desired.
- This chili can be made ahead and reheated.
