Instructions

  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl.
  3. Press mixture into the bottom of a springform pan.
  4. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour cream cheese mixture over crust.
  7. Bake for 50-60 minutes or until set.
  8. Let cool, then refrigerate for at least 4 hours.
  9. In a skillet, melt butter over medium heat. Add sliced bananas and brown sugar.
  10. Cook until bananas are caramelized, about 5 minutes.
  11. Add rum and lemon juice, then simmer for 2 minutes.
  12. Top cheesecake with caramelized bananas before serving.
