- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 ripe bananas, sliced
- 1/4 cup brown sugar
- 1/4 cup rum
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, sugar, and melted butter in a bowl.
- Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour cream cheese mixture over crust.
- Bake for 50-60 minutes or until set.
- Let cool, then refrigerate for at least 4 hours.
- In a skillet, melt butter over medium heat. Add sliced bananas and brown sugar.
- Cook until bananas are caramelized, about 5 minutes.
- Add rum and lemon juice, then simmer for 2 minutes.
- Top cheesecake with caramelized bananas before serving.
Notes
- Ensure cream cheese is at room temperature for easier mixing.
- Let cheesecake cool completely before refrigerating.
- Serve with extra rum glaze if desired.
