Ingredients

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup honey
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth.
- Add sour cream, sugar, eggs, and vanilla; mix until combined.
- Pour the mixture over the crust in the pan.
- Bake for 50-60 minutes or until firm.
- Let it cool at room temperature, then refrigerate for at least 4 hours.
- In a saucepan, heat honey and heavy cream over low heat until combined and slightly thickened.
- Drizzle the caramelized honey over the chilled cheesecake before serving.

- Let the cheesecake sit at room temperature for 30 minutes before serving for best flavor.
- Adjust sweetness by adding more or less honey.
