Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots, sugars, and oil.
  3. Add eggs and vanilla, then mix well.
  4. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Pour half of the batter into a greased springform pan.
  7. In a separate bowl, beat cream cheese, sour cream, powdered sugar, and lemon juice until smooth.
  8. Spread the cream cheese mixture over the batter in the pan.
  9. Top with the remaining carrot cake batter.
  10. Bake for 50-60 minutes or until a toothpick comes out clean.
  11. Let it cool before removing from the pan.
