A delicious cheesy fajita chicken casserole perfect for a family dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1 tablespoon fajita seasoning
  • 4 tortillas, cut into strips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, bell pepper, onion, black beans, corn, salsa, fajita seasoning, and half of the cheese.
  3. Mix well until everything is evenly coated.
  4. In a baking dish, layer half of the tortilla strips on the bottom.
  5. Pour the chicken mixture over the tortillas.
  6. Top with the remaining tortilla strips and the rest of the cheese.
  7. Bake for 25-30 minutes or until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add more vegetables.
  • You can use leftover chicken or rotisserie chicken.
  • Adjust the spice level by adding more or less fajita seasoning.
