A delicious cheesy fajita chicken casserole perfect for a family dinner.
Ingredients

- 2 cups cooked chicken, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese
- 1 tablespoon fajita seasoning
- 4 tortillas, cut into strips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, bell pepper, onion, black beans, corn, salsa, fajita seasoning, and half of the cheese.
- Mix well until everything is evenly coated.
- In a baking dish, layer half of the tortilla strips on the bottom.
- Pour the chicken mixture over the tortillas.
- Top with the remaining tortilla strips and the rest of the cheese.
- Bake for 25-30 minutes or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add more vegetables.
- You can use leftover chicken or rotisserie chicken.
- Adjust the spice level by adding more or less fajita seasoning.
