A creamy and hearty chicken corn chowder that warms you up.
Ingredients

- 2 cups cooked chicken, shredded
- 2 cups corn, frozen or fresh
- 1 cup diced potatoes
- 1 cup diced onion
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon thyme
Instructions
- Melt butter in a large pot over medium heat.
- Add diced onion and cook until soft.
- Add diced potatoes and corn, cook for 5 minutes.
- Pour in chicken broth, bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Add shredded chicken, heavy cream, salt, pepper, garlic powder, and thyme.
- Simmer for another 10 minutes, stirring occasionally.
- Serve hot.
Notes
- Use rotisserie chicken for convenience.
- Add more vegetables like carrots or celery if desired.
- Store leftovers in an airtight container in the fridge.
