A delicious chicken enchilada dish with a rich sauce and melted cheese.
Ingredients

- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheese
- 1/2 cup diced onions
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 375°F (190°C).
- In a pan, heat olive oil and sauté onions until soft.
- Add shredded chicken, cumin, garlic powder, and half of the enchilada sauce. Mix well.
- Place some chicken mixture in each tortilla, roll them up, and place in a baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas.
- Sprinkle cheese on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Serve with sour cream on the side.
Notes
- Use any cooked chicken leftovers for this recipe.
- Add bell peppers for extra flavor.
- Adjust spice level by adding jalapeños.
