Chicken Enchiladas That Will Make You Swoon with Joy

Description

A delicious chicken enchilada dish with a rich sauce and melted cheese.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese
  • 1/2 cup diced onions
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil and sauté onions until soft.
  3. Add shredded chicken, cumin, garlic powder, and half of the enchilada sauce. Mix well.
  4. Place some chicken mixture in each tortilla, roll them up, and place in a baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas.
  6. Sprinkle cheese on top.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Serve with sour cream on the side.

Notes

  • Use any cooked chicken leftovers for this recipe.
  • Add bell peppers for extra flavor.
  • Adjust spice level by adding jalapeños.
