- 1 egg

- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper.
- Form the mixture into meatballs.
- Heat olive oil in a skillet over medium heat.
- Brown the meatballs on all sides, about 5 minutes.
- Transfer the meatballs to a baking dish.
- In the skillet, add chicken broth, lemon juice, and capers; bring to a simmer.
- Pour the sauce over the meatballs.
- Bake for 15-20 minutes until cooked through.
- Serve warm with sauce drizzled over the top.
