Description

Chicken Piccata meatballs are tender and flavorful, served in a zesty lemon sauce.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tablespoon capers
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix chicken, breadcrumbs, Parmesan, parsley, egg, garlic, salt, and pepper.
  3. Form mixture into meatballs.
  4. Heat olive oil in a skillet over medium heat.
  5. Brown meatballs on all sides, then transfer to a baking dish.
  6. In the skillet, add chicken broth, lemon juice, and capers.
  7. Bring to a simmer, then pour over meatballs.
  8. Bake for 20 minutes until cooked through.
  9. Stir in butter before serving.
