Ingredients

- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1 egg
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 tablespoon capers
- 1 tablespoon butter
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix chicken, breadcrumbs, Parmesan, parsley, egg, garlic, salt, and pepper.
- Form mixture into meatballs.
- Heat olive oil in a skillet over medium heat.
- Brown meatballs on all sides, then transfer to a baking dish.
- In the skillet, add chicken broth, lemon juice, and capers.
- Bring to a simmer, then pour over meatballs.
- Bake for 20 minutes until cooked through.
- Stir in butter before serving.

- Serve with pasta or rice.
- Garnish with extra parsley if desired.
