- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers
- Fresh parsley for garnish
Instructions
- Flatten the chicken breasts to an even thickness.
- Season with salt and pepper, then dredge in flour.
- Heat olive oil in a skillet over medium heat.
- Add chicken and cook until golden brown on both sides, about 3-4 minutes per side.
- Remove chicken and set aside.
- Add broth, lemon juice, and capers to the skillet.
- Bring to a simmer and stir in butter until melted.
- Return chicken to the skillet and cook for an additional 2 minutes.
- Garnish with parsley before serving.
