Description
Chimichurri chicken is a flavorful grilled dish marinated in a vibrant chimichurri sauce.
Ingredients

- 4 chicken breasts
- 1 cup fresh parsley, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a bowl, mix parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper.
- Place chicken breasts in a plastic bag and pour half of the chimichurri sauce over them. Seal and marinate for at least 1 hour.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side or until cooked through.
- Remove chicken from the grill and let it rest for 5 minutes.
- Serve with remaining chimichurri sauce on top.
Notes
- Chicken can be marinated overnight for more flavor.
- Serve with grilled vegetables or rice.
- Chimichurri sauce can be stored in the fridge for up to a week.
