- 2 chicken breasts
- 1 cup chimichurri sauce
- 1/4 cup garlic sauce
- 1 cup cooked rice
- 1 cup mixed vegetables (bell peppers, zucchini, onions)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season chicken breasts with olive oil, salt, and pepper.
- Grill chicken for 6-7 minutes on each side or until fully cooked.
- While chicken is cooking, sauté mixed vegetables in a pan until tender.
- Remove chicken from grill and let it rest for 5 minutes.
- Slice the grilled chicken.
- In a bowl, layer cooked rice, sautéed vegetables, sliced chicken, chimichurri, and garlic sauce.
- Serve immediately.
Notes
- Adjust the amount of chimichurri sauce to your taste.
- Feel free to use quinoa instead of rice.
- Store leftovers in the refrigerator for up to 3 days.
