  • 1 1/2 teaspoons baking soda

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh blackberries
  • 1 cup blackberry jam
  • 1 cup heavy cream
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  5. Stir in boiling water until well combined.
  6. Pour batter into prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool in pans for 10 minutes, then remove to wire racks to cool completely.
  9. Once cooled, spread blackberry jam between layers and top with whipped cream.
  10. Garnish with fresh blackberries.
